This Lemon Pepper Relish is a taste of its own. It takes us far beyond the bitter sweet of a marmalade to a world of flavours that challenge and tantalise the palate at the same time - sweet, bitter, sour, umami, salty – all 5 basic tastes. Add black peppercorns hand-ground in mortar and pestle and you have a match made in heaven.

Think preserved lemon but more complex and balanced. Add a table spoon to your bolognese sauce or rub it into your roast lamb. The best marinade for your fish.
